AIA dei COLOMBI
Aia dei Colombi was founded in 2002 by the Pascale family, spearhead by brothers Gaetano and Marcello. Their philosophy is to genuinely express the terrior and make quality products. Though they are not officially certified, they follow organic practices and like many organic/sustainable wine producers they understand that their wine is only as good as the grape they grow.
They bottle only estate grown grapes from specific vineyard selections in order to showcase the differences in wine according to different vineyard plots.
The winery covers an area of 10 hectares, between the municipalities of Guardia Sanframondi and Castelvenere, of which 8 are vineyards. The vineyards all fall within the DOC Sannio and Falanghina del Sannio sub-areas of Guardia and Sanframondi. The predominant grape varieties grown are Aglianico and Falanghina with mall vineyards of Sangiovese, Fiano, Merlot and Cabernet Sauvignon.
They utilize soft pressing of grapes to preserve the varietal flavors, fermentation with temperature control in stainless steel, and at times, aging in used french oak.
