CINCINNATO
In 1947, several farmers founded the Cincinnato Cooperative in Cori, Lazio with the purpose of processing and selling their own production and supporting the progress of local agriculture. The winery is named after the ancient Roman senator and farmer Cincinnatus. Coops are not so common, but they provide a financial outlet for multiple farmers and in Italy, most are of high quality- these aren’t bulk wine coops, but rather quality driven with a particular focus on native grape varieties. Because of their collective efforts, these wines come to us at more than affordable price points.
The soils here are reddish volcanic clay, found at between 100-250 meters above sea level. All the growers are certified organic and grape quality is regulated with a strict set of parameters. To provide stylistic consistency, all the wines we carry at Cittavino & Co. are fermented with selected yeasts in temperature controlled stainless steel.
